This Swiss Steak is fork tender and delicious. Depending on how thinly your steak is sliced, it may just fall apart when being served. It is delicious served over rice, pasta or (garlic) mashed potatoes. Also serve with roasted broccoli or other green veggie or salad.
If avoiding wheat, simply use GF flour, arrowroot or smaller amount of organic cornstarch, or tapioca in place of flour.
2 medium onions, peeled and sliced into rings
3 - 4 lb round steak or flank steak or other boneless cut
1 C flour
6 T oil
2 C water
4 C milk
1/2 tsp paprika
3/4 tsp pepper
1 tsp salt
1/4 C sherry
1. Put onions in the bottom of the Crock Pot.
2. Dredge steaks in flour and brown in hot skillet with oil.
3. Place steaks on top of onions in the Crock Pot.
4. Add the remaining flour to the dripping sin the skillet and stir to brown.
5. Pour in water slowly and stir well. Then add milk and sherry, keep stirring until thick and smooth.
6. Pour the gravy over the meat in the Crock Pot. Cover and cook on Low for 8-12 hours.
