Colorful Cabbage Salad



This a great make-ahead salad, it keeps very nicely in the refrigerator.

1 small red cabbage, sliced
1 small green cabbage, sliced
2 apples, cut into 1" cubes
1/2 - 1 C pecans, chopped (toast them in a dry skillet for more flavor)

DRESSING:
1/2 C apple cider vinegar
1/2 C extra virgin olive oil
1 T salt
3 T poppy seeds
1/4 C maple syrup
pepper to taste

1. In a large bowl. whisk together dressing ingredients.

2. Add remaining salad ingredients and toss to coat evenly.

Servings: 15
