Greek Salad


2 tomato, chopped
2 cucumber, chopped
1 red bell pepper, chopped
1/2 red onion, diced
1/2 C olives, chopped
DRESSING:
1/2 C pine nuts
1/4 C extra virgin olive oil
1/4 C fresh lemon juice
1-2 cloves garlic, minced
fresh rosemary
1-2 tsp  salt
pepper (fresh ground is best)

1. Prepare dressing by whisking together dressing ingredients in a bowl.

2. Put salad ingredients together in a medium size owl and toss with dressing.  Pepper to taste.
