JP's Parmesan Salad

This is a robust salad, very much like a Caesar salad.

2  cloves garlic, minced
1/4 tsp salt
1/8 tsp mustard powder
2 T lemon juice
2 T Parmesan cheese, grated
4 T extra virgin olive oil
olives, sliced
romaine lettuce, torn
fresh ground pepper to taste

1. Mix together all the dressing ingredients in the bottom of the salad bowl.

2. Add the lettuce and olives and toss to coat.

Servings: 4

Tips
This salad is best served in amount you are sure to eat - since it is dressed and will get soggy if you try to store it.

However, we always make a big bowl, because of the size of out family. The amounts for a big size family follow:

1/3 C lemon juice, 1/3 C grated parmesan, 2/3 C oil, 4-6 cloves garlic, 1/2 tsp salt
