Rhythm Salad

This salad may seem a little odd, but try it, it is delicious!

1 C cabbage, shredded
1 apple,  cut into 1" cubes
1/2 C carrots, shredded
3/4 C dried prunes, quartered
3/4 C dried apricots, quartered
1/4 C raisins or dried cranberries
1/4 C nut of choice, chopped
lemon juice
mayonnaise

1. Put dried fruit in a sauce pan and put just enough water to almost cover the fruit.  Bring to a boil then reduce heat, to gently stew the fruit until soft and moist.

2. Put apples, cabbage, and raisins/cranberries  in a serving bowl.  Drizzle with some fresh lemon juice and toss.

3. Strain out the fruit and add to the cabbage, put a small dollop or mayo in the bowl and mix.  Top with crushed nuts.  Enjoy!
