Sweet Brussel Hash



A delicious savory breakfast!

1 lb beef bacon cooked and diced (save 1/4C drippings)
4-5 onions, chopped
5 small sweet potatoes cut into 1 1/2 inch cubes
5 garlic clove, minced
4 lb. brussel sprouts, halved (or quartered)
10 eggs
Salt and pepper to taste

1. bake bacon, at 400 for about 15 minutes

2. Use some of the bacon grease to cook the veggies in the bottom of large heavy bottom pot, saute onion and sweet potatoes until almost tender.  Add brussels and saute until tender.  Salt and pepper to taste.

3. Keep hash warm and fry eggs as desired.  Serve eggs on top of hash.
