Bacon Wrapped Roasted Jalapeno Poppers



12 large jalapeno peppers
4 oz cream cheese
1/2 C shredded sharp cheddar cheese
3 green onions, finely minced
12 slices beef bacon

1. Cut each pepper in half lengthwise, and scoop out the seeds and membranes with a spoon.

2. Blend cream cheese, cheddar, and green onion until smooth- chill mixture to firm.

3. Spoon out a small amount of the cream cheese rolling it into a small pepper-shaped bullet, and stuff slit pepper. Do not over fill.

4. Wrap a slice of uncooked bacon around the pepper, overlapping slightly. Secure ends with a toothpick, if needed. Place on a greased cookie sheet.

5. Bake in oven preheated to 400 degrees. Bake for 20-30 minutes until bacon is crisp and pepper is soft.
