French Onion Soup



1/2 C butter
6 C onions sliced thinly
1 T salt
1/4 C flour
8 C beef broth or stock
  toast or croutons
  shredded swiss or parmesan cheese

1. In a soup pot, combine butter and onions and saute until translucent.

2. Add salt and flour and mix.

3. Add broth; and bring to a boil. Turn down heat and simmer 1 hour.

4. TO SERVE: Put toast and cheese in bottom of a bowl and pour soup over top.
