Mexican Breakfast Sausage

3 lbs ground beef or venison
2 C coconut oil
1 T salt
1/4 tsp ground white pepper
1/4 tsp cayenne pepper
1/4 tsp red pepper flakes
1/4 tsp  ground coriander
2 tsp ground cumin
6 T paprika
1 tsp brown sugar
6 T balsamic vinegar
4 cloves garlic minced
1 tsp chilli powder
1/4 tsp ground cloves

1. Mix meat, oil, and spices by hand until well blended.

2. Stuff into casings or patty. Freeze or use within 36 hours.
