Large bunch spinach or collards, diced and steamed
2 T butter
1 C+ sliced mushrooms
1 med onion diced
6 large eggs
6 T milk
1/4 tsp salt
8 oz cream cheese, cut into small pieces
1. Saute onions in butter. Add mushrooms for a couple minutes, than the steamed greens. Pour into 9X13 baking dish.
2. In a separate bowl, combine remaining ingredients. Pour over vegetables in pan.
3. Bake at 350 for 35 minutes.
