9 handfuls spinach, chopped
2 avocados, chopped
2 handfuls pecans, chopped
3 T olive tampenade (see recipe)
3 T apple cider vinegar
3 T maple syrup
3 T extra virgin olive oil
salt and pepper to taste
1. Mix together, vinegar, oil and syrup for the dressing set aside.
2. Put all the ingredients in a large salad bowl. Toss with the dressing and enjoy!
