2 heads romaine lettuce, shredded
1 cucumber, sliced
1 15 oz can mandarin oranges or equivalent fresh orange of choices, cut into pieces
1 15 oz can olives, sliced
1/4 C pecans, chopped (toast them in a dry skillet for more flavor)

DRESSING:
1 C fresh orange juice
1/2 C honey
1/2 C olive oil
2 T red wine vinegar
2 T Dijon mustard
1/2 tsp pepper
1. Put all the ingrediants in a large salad bowl.
2. In a small bowl or pint jar, whisk together dressing ingredients and toss with salad and serve.
