Pizza Spaghetti Squash Casserole



2 spaghetti squash
2 lb. ground beef
1 onion, diced
2 C tomato sauce
2 C baby spinach, chopped
2 red bell peppers, diced
1/2 C applesauce
2 tsp basil
1  tsp garlic powder
1 tsp oregano
1/2 tsp pepper
6 eggs, beaten

1. Bake squash @ 450F for 20 minutes

2. Remove from oven and reduce heat to 350F

3. Scoop squash out into a 9x13 pan.

4. Cook sausage and onion in a skillet.

5. Remove from heat.  Add remaining ingredients.  Spread over squash pan.

6. Beat eggs and toss into squash dish, to coat.  Bake until egg is set, about an hour.
