Sausage Butternut Squash Stew
2 T oil
1 med onion
2 cloves garlic
1 lb browned and seasoned ground beef or summer sausage
2 C butternut squash, cut into 1/4 inch chunks
3 C beef broth
4 C fresh kale, chopped
1/2 tsp salt and pepper
1 tsp italian seasoning
1. Heat a large skillet over med heat. Add the coconut oil to the pan with onions and garlic. Stir and cook until transluscent.
2. Add the sausage to the pan and cook well if not already cooked.
3. Add the butternut squash, broth and kale. Stir well.
4. Season with salt pepper and Italian seasoning.
5. Turn heat down and cook for about 20 minutes on simmer, until the squash is cooked through.
