This salad can be made and dressed days ahead and stores very well in the fridge if you have left overs.
1 bunch kale, sliced into very thin and shortribbons
juice of 1 lemon
1/4 C dried cranberries
2-3 T extra virgin olive oil
salt
1/4 tsp cayenne
1/4 tsp pepper
1 clove garlic, minced
1/4 C shaved parmesan
1. Put kale in a bowl, add cranberries and shaved parm. Toss in dressing.
2. blend together lime juice,oil, salt, pepper, cayenne and garlic.
