I love this salad! Lacinato kale is my favorite type of kale to use for this salad, but any will do. Letting it sit in the fridge softens the kale 'just right'. It is SUPER FOOD!
kale, chopped
1/4 red onion, diced
carrot, shredded
1 C berries of choice
dried cranberries or rasins
sunflower seeds
pecans, chopped
2 (15 oz) cans chick peas (garbanzo beans)
DRESSING:
3/4 C honey
1/2 C apple cider vinegar
1/2 tsp salt
1/2 tsp pepper
1/4 C extra virgin olive oil
1. Mix up dressing and set aside.
2. Toss salad ingredients together. Add dressing to taste.
3. Refridgerate 4-6+ hours before serving.

Tips
May sub peanuts, cashews, or pistachios.
May add diced avocado.
May sub orange slices for berries or omit fresh fruit.
