Technicolor Carrot Salad

There is something about this simple dressing that seems to brighten the color and flavor of the carrots.  How can something so simple be so good?

1 lb baby carrots
1 small lemon
1 small lime
maple syrup

1. Shred carrots (in a food processor or by hand).

2. Squeeze the juice of the lemon and lime over the carrots.

3. Drizzle very lightly with maple syrup and mix it all together.  Serve now or later.
