SDT Balsalmic Pot Roast



1 beef roast
3 sweet onions, sliced
1 C sun dried tomatoes
1 T salt
1 T pepper
1 T garlic powder
2 T coconut oil
1/2 C balsamic vinegar
1 1/2 C beef broth

1. Season roast with salt, pepper and garlic powder, than sear in a hot pan with oil,on each side for about 3 minutes. (do not omit this step)

2. Put sliced onion in the bottom of the crock pot, Put the roast on the onions.

3. In the pan that you brown the beef, Stew the SDT in 1C water, until softened, then puree with a stick blender.  pour tomatoe puree over roast.  Add broth and vinegar,

4. Cook on high for 5 hours low for 8+ hrs.

5. Remove and slice the the meat.  Reduce the liquid by half in separate pan or in the crock on high with the lid off.  Serve with onions and sauce drizzled over top.
